Again thanks to support by all of you , another udon workshop was done in India for chefs from this place where His Holiness the 14th Dalai Lama often visits. The menu in this place strictly stick to organic products. So no white sugar, white wheat flour, MSG and so on…Therefore this time instead of plain flour, whole wheat flour was used for udon making, which resulted in brownish udon, but it tasted great! And we got dashi from seaweed and bonito for sauce, and happened to do a soba(buckwheat flour based)making workshop as well lol Thank you so much for an opportunity and cozy time!

またしても有難いご縁により、敬愛するダライ・ラマ法王も訪れるインドにある由緒正しき某所のシェフの方々に、うどんワークショップをさせて頂きました！ここでのメニューは超オーガニックで、白砂糖、精製された小麦粉、MSGなど（他にも色々）は原則全て含まれていません。つまり、うどんワークショップは全粒粉（白くない小麦粉）を使ったもので行われ、そこに谷村うどん独自のアイデアを加え、結果的には日本の方々がうどんのイメージでは抱かない「茶色がかったもちもちうどん」が出来上がりました。そこから昆布、鰹節などを使い出汁をとり、さらになぜかそば作りまでレクチャーする流れとなり（笑）楽しませて頂きました！ありがとうございました。

When indecisive, hear the wind sing

Here I am in Rishikesh, widely known as an holy ground of yoga. I am not a yogi by the way…

The tile of this article comes from Haruki Murakami’s (Japanese author) very first novel “hear wind sing”. Obviously, I cannot come up with this kind of stylish phrase…

If I was asked whether I am emotional type of person or logical type, probably would fall into “logical” side. I tend to think about anything. But probably should stop this habit. Be calm and carefully hear the wind sing rather. Then would start noticing the sound that was hidden. If you start walking towards where the sound comes from, sometimes you bump into something interesting.

When I was in Myanmar, I heard about this traveler. He was a surfer carrying only smartphone, a bit of cash, and passport. This man doesn’t make a booking for hotels and sleep at a beach when night comes. When he didn’t have money, but definitely wanted to visit the place, he became friend with the manager and got in for free. At a restaurant, he never checked a menu, but instead asked a waiter for the best food in a restaurant which could surprise him. I don’t know how much of this story is true, but I felt like this guy really lives with his instinct.

In short, I would say traveling is boring when everything is confirmed and fixed. This surfer enjoys his journey by creating unpredictable space in his days. And how he makes decisions is all on his instinct, voice from your heart or surrounding sound (could be wind).

Somewhere like Rishikesh, surrounded by mountain and beautiful Ganges, is the perfect place for your brain and acts to be simple. When you can remain simple, it is not hard to make decisions. Simply follow your heart and flow towards wherever it takes to.

迷ったら、風の歌を聴け 

流れに流れ、ヨガの聖地・リシケシにやってきた。ちなみに、私はヨギーではない・・・

タイトルはそう、私が敬愛する村上春樹氏の処女作「風の歌を聴け」からそのまま引用である。こんな粋なフレーズが思いつくはずがない・・・

そもそも、私はどちからというと色々考える事をするタイプだと思う。感情派より、論理派であるように思う。でも最近思う。ごちゃごちゃ考えずに、耳を澄ませ。そうすると、色々これまで気づいていなかった音があることに気づく。なんだこの音は・・・とか思って音のする方に行ってみたりすると、何やら面白いことが起こっていたりする。

というのも、ミャンマーでとある旅人の話を聞いた。その旅人は、殆ど使わないスマホ、ある程度の小額のキャッシュ、パスポートしか持たないサーファーであったらしい。そのサーファーは、ホテルの予約はせず、夜が来たら浜辺で寝る。お金が必要な場所があれば、持ち前のコミュニケーション能力でマネージャーと友達になり、無料で入れてもらう。レストランに入れば、メニューは見ず、この店で一番美味しい食べ物で私を驚かせてくれ、と言い注文するらしい。どこまで本当かわからないが、（逆にややこしそうだ・・・という印象を持ちつつも）なんて感覚的な人なんだ、と話を聞いてて思った。

つまるところ、論理から導き出さられる確固たるものを持ち始めると、旅はつまらないのである。予想不可能な空白をこのサーファーは自ら作って旅を楽しんでいる。その空白の渦中で、どのように物事を決めるのかというと、きっとそれは直感である。直感とは、心の声であり、風の歌なのである。 

リシケシのような、山に囲まれ、ガンジス川が流れるような自然が身近にあると、思考や行動がシンプルになる。自分がシンプルであることができれば、ごちゃごちゃ考えずとも、あらゆる物事は直感から導き出されるものである。
