Cairo seemed like a cosmopolitan city that has a plenty of ingriedients and perfect cooking environment compared to Ethiopia. But obviously there are lots of Muslims who follow Halal and vegans who cannnot eat fish stock so I managed to make a soysauce based sauce instead.

When I travel/live in other countries, my favorite phrase is “ they’ve got their situations I don't know/understand”. If you can say this to yourself, I think you are a strong person.
Japan is not a country of racial diversity. I understand that there are many foreigners living in Japan, but you cannot compare to the percentage of diversity in the U.S or European countries. We, Japanese people share the value, so called Japanese value and is sometimes overwhelming(It doesn’t mean to segregate and offend foreigners living in Japan). There is something called commonsense that we all share as Japanese, and it’s so comfortable to live in Japan if you can understand them to the core and completely follow the rules (By the way I personally feel this habit is creepy). 99% of Japanese people would support you as long as you are following the rules in Japan. But in other countries, I notice there is nothing like commonsense.
When I was Rwanda in Africa, I was cooking udon so I asked my Rwandan friend “do you have a salt?”. HIs answer was “yes” but the conversation ended here. Personally, asking a question “do you have a salt?” is nearly equal to “can you get me a salt?”, so I have expected him giving it to me but nothing has happened afterwards. In the end, I asked him “can you get me a salt?” and he eventually gave it to me. There could have been other factors such as language issues that made my point difficult to understand for him, but I noticed that I was “expecting” him to understand my intention or norm without explaining it clearly. I was pushing my norm to him unconsciously. It’s interesting(hard) to live in Africa, because something like this happens!
外国で生活する上で、何か自分が期待していたように物事が運ばなかった時の自分的な合言葉は「ま、なんか皆んな色々事情があるんだろうな～」である。これが言えたら強い。
日本にいると、「普通はこうでしょ！」という共通認識の中で生きているので、それに染まることが出来れば異常に過ごしやすい。その「普通」から外れている行動は、日本中が「おかしい！」と言ってくれる。でも、外国にいると「これが当たり前」というもの等存在しないことに日々気づかされる。
アフリカのルワンダという国にいた時、うどんを作っていたので、居候させてもらっていたルワンダ人の方に、「塩ある？」と聞いてみた。すると、「ある」という答えだけ返ってきて、会話が終了した。個人的な感覚としては「塩ある？」と聞かれて、あった場合、塩を渡してくれるものだと期待してしまうが、この時はこの会話までで終了。結果的に、「塩ちょっともらえる？」というと、塩を渡してくれた。この時、もしかしたら言語的な意思疎通の問題など他の要因があったのかもしれないが、「あー自分は、こう言ったら普通こうでしょ！という人に求める期待値が高すぎるのだ」と考えさせられた。「普通」の押し付けを無意識にしていた。アフリカはこういうことがあるから面白い（大変）。
